Halva from a semolina (Sooji Halwa)

It is very popular festive dish in India. It is cooked quickly from accessible to each products and is wonderful dessert.

3 glasses (600 ml) of water, 1 glass (200 gramme) of sugar,1 glass (150 gramme) of semolina,100 gramme of dairy butter, 50 gramme of raisin, one pinch of vanillin.

Mix up water and sugar in a pan and bring to boiling on strong fire. Then decrease a fire. Melt butter in small pan, pour out semolina and fry, stirring on moderate fire for 15 minutes, while the semolina will not become goldish. Add raisin and fry for 5 minutes. While stirring carefully and little by little infuse syrup in semolina and add vanillin. Cook on weak fire of 3 minutes, stirring. Take it off from a fire and leave under a lid for 5 minutes.
